Description

A delicious and hearty vegetable lasagna packed with flavor and nutrients.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 egg
  • 3 cups marinara or tomato sauce
  • 2 cups spinach, fresh or frozen (thawed)
  • 1 zucchini, thinly sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • Olive oil, for sautéing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced bell pepper, mushrooms, and zucchini. Sauté for about 5-7 minutes until softened. Stir in spinach and cook for an additional 2 minutes. Season with salt, pepper, oregano, and basil.
  4. In a bowl, combine the ricotta cheese, egg, a pinch of salt, and pepper. Mix until smooth.
  5. In a baking dish, spread a thin layer of marinara sauce on the bottom.
  6. Place three lasagna noodles over the sauce.
  7. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
  8. Pour some marinara sauce over the vegetables and sprinkle with a third of the shredded mozzarella.
  9. Repeat layers: noodles, ricotta, sautéed vegetables, sauce, and mozzarella two more times, finishing with noodles topped with marinara sauce and remaining mozzarella.
  10. Cover the dish with aluminum foil (to prevent sticking, spray foil with cooking spray) and bake for 25 minutes.
  11. Remove the foil and bake for an additional 20-25 minutes, until the cheese is bubbling and golden.
  12. Let it cool for 10-15 minutes before slicing.

Notes

  • Use fresh or frozen spinach according to your preference.
  • Feel free to add other vegetables you enjoy.
