- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 3 cups marinara or tomato sauce
- 2 cups spinach, fresh or frozen (thawed)
- 1 zucchini, thinly sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste Salt and pepper
- Olive oil, for sautéing
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced bell pepper, mushrooms, and zucchini. Sauté for about 5-7 minutes until softened. Stir in spinach and cook for an additional 2 minutes. Season with salt, pepper, oregano, and basil.
- In a bowl, combine the ricotta cheese, egg, a pinch of salt, and pepper. Mix until smooth.
- In a baking dish, spread a thin layer of marinara sauce on the bottom.
- Place three lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
- Pour some marinara sauce over the vegetables and sprinkle with a third of the shredded mozzarella.
- Repeat layers: noodles, ricotta, sautéed vegetables, sauce, and mozzarella two more times, finishing with noodles topped with marinara sauce and remaining mozzarella.
- Cover the dish with aluminum foil (to prevent sticking, spray foil with cooking spray) and bake for 25 minutes.
- Remove the foil and bake for an additional 20-25 minutes, until the cheese is bubbling and golden.
- Let it cool for 10-15 minutes before slicing.
Notes
- Use fresh or frozen spinach according to your preference.
- Feel free to add other vegetables you enjoy.
- This lasagna can be made ahead of time and refrigerated before baking.
