Description

This crispy Thai chicken recipe features tender chicken pieces coated in a light cornstarch batter, fried to perfection, and tossed in a flavorful sweet chili sauce.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ cup cornstarch
  • 2 large eggs, beaten
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup vegetable oil (for frying)
  • ¾ cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare the chicken coating by seasoning the chicken pieces with salt and pepper. Dip each piece into the beaten eggs, then coat thoroughly in cornstarch. This simple coating creates that irresistible crispy exterior once fried.
  2. Fry the chicken until golden and crisp in the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the chicken in batches. Fry for about 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.
  3. Prepare the sweet chili sauce mixture in a small bowl by whisking together Thai sweet chili sauce, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil.
  4. Toss the chicken in the sauce with excess oil from the pan, leaving about a tablespoon behind. Return the chicken to the skillet and pour the sauce over it. Cook for 2–3 minutes, stirring gently, until the sauce thickens and coats the chicken beautifully.
  5. Garnish and serve with sliced green onions and sesame seeds. Serve hot over steamed jasmine rice or alongside stir-fried vegetables.
