Description

A refreshing mango salad with a zesty dressing and crunchy peanuts or cashews, perfect for summer.


Ingredients

  • 2 large mangoes (peeled and cut into strips)
  • 1/2 cucumber (cut into matchsticks)
  • 1/2 red onion (thinly sliced)
  • 1 Thai red chili (stem and seeds removed, very thinly sliced)
  • 1/2 cup peanuts or cashews (roughly chopped)
  • 1/2 cup chopped mint
  • 1/2 cup chopped cilantro
  • 2 tbsp lime juice
  • 2 tbsp coconut aminos (or tamari/soy sauce)
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil

Instructions

  1. In a large mixing bowl, combine the mango, cucumber, red onion, Thai chili, nuts, and herbs. Gently toss to mix.
  2. In a separate small bowl, whisk together lime juice, coconut aminos, honey/maple syrup, and sesame oil until well combined.
  3. Pour the dressing over the salad mixture right before serving and toss until everything is well coated. Serve immediately for optimal freshness.
