A refreshing mango salad with a zesty dressing and crunchy peanuts or cashews, perfect for summer.
Ingredients

- 2 large mangoes (peeled and cut into strips)
- 1/2 cucumber (cut into matchsticks)
- 1/2 red onion (thinly sliced)
- 1 Thai red chili (stem and seeds removed, very thinly sliced)
- 1/2 cup peanuts or cashews (roughly chopped)
- 1/2 cup chopped mint
- 1/2 cup chopped cilantro
- 2 tbsp lime juice
- 2 tbsp coconut aminos (or tamari/soy sauce)
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
Instructions
- In a large mixing bowl, combine the mango, cucumber, red onion, Thai chili, nuts, and herbs. Gently toss to mix.
- In a separate small bowl, whisk together lime juice, coconut aminos, honey/maple syrup, and sesame oil until well combined.
- Pour the dressing over the salad mixture right before serving and toss until everything is well coated. Serve immediately for optimal freshness.
