Description

A refreshing avocado chicken salad filled with flavor.


Ingredients

  • 2 ripe avocados, halved and pitted
  • 300g cooked chicken, shredded
  • 3 tablespoons yogurt or light mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 celery stalk, finely chopped
  • 1/2 red bell pepper, diced
  • Optional: 2 tablespoons chopped nuts (walnuts or almonds)
  • 1 tablespoon chopped chives or parsley
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients on a clean workspace.
  2. In a mixing bowl, combine shredded chicken with yogurt or mayonnaise, lemon juice, celery, red bell pepper, nuts (if using), chives or parsley, salt, and pepper. Mix well until coated.
  3. Scoop out some flesh from each avocado half if desired. Sprinkle with salt.
  4. Generously fill each avocado half with the chicken salad mixture.
  5. Serve immediately for fresh flavor and texture.
