Ingredients

- 2 ripe avocados, halved and pitted
- 300g cooked chicken, shredded
- 3 tablespoons yogurt or light mayonnaise
- 1 tablespoon fresh lemon juice
- 1 celery stalk, finely chopped
- 1/2 red bell pepper, diced
- Optional: 2 tablespoons chopped nuts (walnuts or almonds)
- 1 tablespoon chopped chives or parsley
- Salt and pepper to taste
Instructions
- Gather all ingredients on a clean workspace.
- In a mixing bowl, combine shredded chicken with yogurt or mayonnaise, lemon juice, celery, red bell pepper, nuts (if using), chives or parsley, salt, and pepper. Mix well until coated.
- Scoop out some flesh from each avocado half if desired. Sprinkle with salt.
- Generously fill each avocado half with the chicken salad mixture.
- Serve immediately for fresh flavor and texture.

- This salad can be served as a light lunch or appetizer.
- Substitute Greek yogurt for a tangier flavor.
