Ingredients

  • water
  • 6 cups whole milk
  • 1½ teaspoons kosher salt, adjust to taste
  • ½ teaspoon freshly ground black pepper, adjust to taste
  • 2 tablespoons butter, optional

Instructions

  1. Place chopped potatoes in a pot and cover with water. Boil, then simmer for 15 minutes until fork-tender.
  2. Drain the water and return the pot to the stove.
  3. Add milk and heat on medium until steaming, about 10 minutes (do not boil).
