Description

Delicious pesto chicken sandwiches with fresh basil and mozzarella.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh basil leaves
  • 1/2 cup pesto sauce (store-bought or homemade)
  • 8 oz fresh mozzarella cheese, sliced
  • 4 crusty bread rolls (e.g., ciabatta or focaccia)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
  2. Spread pesto sauce on both sides of the warm chicken breasts.
  3. Slice the cooked chicken thinly and layer it on one half of each bread roll. Top with fresh basil and mozzarella slices.
  4. Close the sandwiches tightly and drizzle olive oil on the outside.
  5. Grill sandwiches in a preheated panini press or skillet over medium heat for 3-5 minutes until crispy and melty.
  6. Slice diagonally for serving and enjoy!
