Delicious pesto chicken sandwiches with fresh basil and mozzarella.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup fresh basil leaves
- 1/2 cup pesto sauce (store-bought or homemade)
- 8 oz fresh mozzarella cheese, sliced
- 4 crusty bread rolls (e.g., ciabatta or focaccia)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
- Spread pesto sauce on both sides of the warm chicken breasts.
- Slice the cooked chicken thinly and layer it on one half of each bread roll. Top with fresh basil and mozzarella slices.
- Close the sandwiches tightly and drizzle olive oil on the outside.
- Grill sandwiches in a preheated panini press or skillet over medium heat for 3-5 minutes until crispy and melty.
- Slice diagonally for serving and enjoy!
Notes
- For a spicy kick, consider adding sliced jalapeños.
