This creamy herb chicken basmati rice is a comforting and delicious dish that combines tender chicken breasts with creamy rice, flavored with herbs and parmesan cheese.

- 4 boneless, skinless chicken breasts
- 1 cup basmati rice, rinsed
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small onion, finely diced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Sear the chicken: Heat olive oil and butter in a large skillet or deep pan over medium heat. Season the chicken breasts with salt, pepper, and paprika. Place them in the hot pan and cook for about 4–5 minutes on each side until golden brown. Remove the chicken from the pan and set it aside.
- Sauté the aromatics: In the same pan, add the diced onion and cook for about 3–4 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the rice: Add the rinsed basmati rice to the pan and stir it gently with the onions and garlic. Let it toast for about one minute to enhance its natural nutty flavor.
- Pour in the liquids: Add the chicken broth and heavy cream, stirring well to combine. Sprinkle in the thyme, dried parsley, salt, and pepper. Bring the mixture to a gentle simmer.
- Return the chicken to the pan: Place the chicken breasts back into the pan, nestling them into the rice. Cover the pan with a lid and let everything cook for about 18–20 minutes until the rice is tender and the chicken is fully cooked.
- Finish with parmesan: Stir in the grated parmesan cheese and allow it to melt into the sauce. Sprinkle fresh parsley over the top just before serving.
