Chicken and Potato Burgers

Description

Delicious and healthy chicken and potato burgers served with a variety of toppings.


Ingredients

Scale
  • 1 lb organic ground chicken or turkey
  • 1/4 cup red onion, diced
  • 12 stalks green onion, diced
  • 2 tbsp fresh oregano, chopped
  • 1 tbsp garlic, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup packed spinach, finely chopped
  • 1/2 tsp sea salt
  • ground pepper
  • 2 tbsp avocado oil
  • 35 yellow potatoes, cut into fries
  • 3 tbsp avocado oil
  • 1/2 tsp sea salt
  • 1/4 tsp dried oregano
  • burger buns
  • butter lettuce
  • tzatziki (I use Kite Hill Foods dairy-free)
  • red onion, thinly sliced
  • avocado, thinly sliced
  • cherry tomatoes
  • feta
  • extra virgin olive oil
  • oregano
  • sea salt

Instructions

  1. Combine burger ingredients together, minus avocado oil, and mix until combined. Form into 4-5 patties.
  2. Add avocado oil to medium skillet on medium heat. Once hot, add the patties and cook for 5-6 minutes, or until golden brown. Flip, then cook for another 5 minutes. Add 2 tbsp of water to the pan, reduce heat to low, and cover to finish cooking.
  3. Heat a medium skillet on medium-high heat and add avocado oil. Once hot, add potatoes, flipping throughout until soft and golden brown. Once cooked, transfer to a bowl and add seasonings. Toss to coat.
  4. Build your bowl by layering the burger and fries with toppings of your choice. Enjoy!

  • This recipe can be customized with your favorite toppings.
  • For a lower-carb option, consider lettuce wraps instead of burger buns.
