Description

Delicious and healthy gluten-free oat bars that are perfect for snacks or breakfast.


Ingredients

  • 2 cups gluten-free rolled oats
  • 1 cup gluten-free all-purpose flour blend
  • 1/2 cup nut butter (e.g., almond butter)
  • 1/2 cup liquid sweetener (e.g., maple syrup)
  • 2 eggs (or 2 flax eggs)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Optional mix-ins: 1/2 cup dried fruit (e.g., cranberries, blueberries, chopped apricots, or raisins)
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts/seeds (e.g., walnuts, pecans, pumpkin seeds, or sunflower seeds)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the gluten-free rolled oats, gluten-free all-purpose flour blend, and salt.
  3. In a separate medium bowl, mix the nut butter, liquid sweetener, eggs (or flax eggs), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Fold in any optional mix-ins like dried fruit, chocolate chips, or nuts/seeds.
  6. Transfer the mixture to the prepared baking pan and press it down firmly and evenly.
  7. Bake for 20-25 minutes until the edges are lightly golden brown and the center is set.
  8. Let the bars cool completely in the pan on a wire rack before slicing into 9 or 12 bars.

Notes

  • Store leftover bars in an airtight container for up to a week.
