- 1 pound Ground Beef (can substitute with shredded chicken or black beans)
- 1 medium Onion (chopped; yellow or white onions are best)
- 2 cloves Garlic (minced)
- 1 teaspoon Chili Powder (adjust amount to taste)

- 0 cup Tomato Sauce (can substitute with salsa)
- 8 Tortillas (flour or corn; warm before using)
- 1 cup Shredded Cheese (cheddar, Monterey Jack, or Mexican blend)
- to taste Oil (for brushing; can substitute with cooking spray)
Instructions
- In a skillet over medium heat, brown the ground beef and chopped onion for 5-7 minutes until fully cooked. Add minced garlic, chili powder, cumin, paprika, salt, and pepper, then stir in the tomato sauce and simmer for another 2 minutes.
- To prevent cracking, heat the tortillas in a skillet for about 10 seconds on each side or microwave them for a few seconds until pliable.
- Spoon approximately 2 tablespoons of the beef mixture onto each tortilla, sprinkle with shredded cheese, and roll tightly, tucking in the sides.
- Preheat your oven to 425°F (220°C). Arrange the taquitos seam-side down on a lined baking sheet. Brush the tops lightly with oil and sprinkle with more cheese.
- Bake for 15-18 minutes or until golden brown and crispy; consider broiling for the last minute.
Notes
- For a vegetarian option, substitute the ground beef with black beans.
- Serve with salsa or your favorite dipping sauce.
