Description
A delicious and creamy fettuccine dish with tender chicken breast and rich parmesan cheese.
Ingredients
Scale
- 2 boneless skinless chicken breasts
- 10 oz fettuccine pasta
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 4 garlic cloves, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Reserve 1 cup of pasta water and drain the rest.
- Pat chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken 5–6 minutes per side until golden and cooked through. Remove and let rest, then slice into bite-sized pieces.
- In the same skillet, reduce heat to medium. Add butter and stir in minced garlic. Cook for 1–2 minutes until fragrant.
- Pour in heavy cream and let simmer for 3–4 minutes. Gradually add parmesan, stirring constantly until the sauce is smooth.
- Add the cooked fettuccine to the skillet and toss to coat with sauce. Stir in sliced chicken. If the sauce is too thick, add a splash of reserved pasta water.
- Let everything heat together for 2–3 more minutes.
- Garnish with chopped fresh parsley and more parmesan if desired. Serve hot.
