Ingredients

- 3 ¼ cups bread flour
- 1 cup cold whole milk
- 2 ¼ tsp active dry yeast
- ¼ cup granulated sugar
- 1 tsp fine sea salt
- 3 tbsp softened unsalted butter
- 1 cup cold European-style butter
- 8 oz chopped dark chocolate
- Optional semi-sweet chocolate for filling
Instructions
- Prepare the dough by mixing flour, sugar, salt, and yeast. Add cold milk and softened butter until a shaggy dough forms. Knead for 5–7 minutes until smooth, then chill for at least 2 hours.
- Create a butter block by pounding cold butter between parchment paper to form a rectangle.
- Encase the butter in the chilled dough, roll out to size, and fold in thirds. Repeat this process three times with chilling intervals.
- Roll out again to cut triangles, add chocolate pieces, and roll tightly from base to tip. Let proof until puffy.
- Bake in a preheated oven at 400°F (200°C) for 18–22 minutes until golden brown.
