Description

Delicious homemade chocolate croissants layered with rich dark chocolate.


Ingredients

  • 3 ¼ cups bread flour
  • 1 cup cold whole milk
  • 2 ¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • 1 tsp fine sea salt
  • 3 tbsp softened unsalted butter
  • 1 cup cold European-style butter
  • 8 oz chopped dark chocolate
  • Optional semi-sweet chocolate for filling

Instructions

  1. Prepare the dough by mixing flour, sugar, salt, and yeast. Add cold milk and softened butter until a shaggy dough forms. Knead for 5–7 minutes until smooth, then chill for at least 2 hours.
  2. Create a butter block by pounding cold butter between parchment paper to form a rectangle.
  3. Encase the butter in the chilled dough, roll out to size, and fold in thirds. Repeat this process three times with chilling intervals.
  4. Roll out again to cut triangles, add chocolate pieces, and roll tightly from base to tip. Let proof until puffy.
  5. Bake in a preheated oven at 400°F (200°C) for 18–22 minutes until golden brown.
