Ingredients

  • 1 package (3 oz) instant pistachio pudding mix
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup chopped dried cherries
  • ½ cup chopped pistachios
  • ½ cup powdered sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
  4. Beat in pistachio pudding mix, eggs, and vanilla extract until smooth.
  5. Gradually add dry ingredients to wet ingredients and mix until combined.
  6. Fold in chopped cherries and pistachios.
  7. Cover the dough and chill for at least 30–45 minutes to firm up.
  8. Roll chilled dough into 1-inch balls and coat generously with powdered sugar.
  9. Place on prepared baking sheet, spacing 2 inches apart.
  10. Bake for 10–12 minutes until tops crack and edges are lightly golden.
  11. Cool cookies on the sheet for a few minutes, then transfer to a wire rack to cool completely.
