Description

This delicious dish combines tender chicken, Banza pasta, and a refreshing tomato cucumber salad, topped with a spicy Calabrian chili sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz Banza chickpea pasta
  • Water and salt for boiling
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • ¼ cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • ½ cup Greek yogurt
  • 12 teaspoons Calabrian chili paste
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 minced garlic clove
  • Pinch of salt

Instructions

  1. Bring salted water to a boil. Add Banza pasta and cook according to package instructions (about 7–9 minutes). Drain and set aside.
  2. Pat chicken dry and season with olive oil, garlic powder, paprika, oregano, salt, and pepper.
  3. Heat a skillet over medium heat and cook chicken for 6–7 minutes per side until fully cooked (internal temperature 165°F / 74°C). Slice the chicken.
  4. In a bowl, combine tomatoes, cucumber, red onion, parsley, olive oil, and lemon juice. Season with salt and pepper.
  5. Whisk Greek yogurt, chili paste, olive oil, lemon juice, garlic, and salt until smooth and creamy.
  6. Divide cooked Banza pasta into bowls. Top with sliced chicken and tomato cucumber salad.
  7. Drizzle generously with Calabrian chili sauce.
