Description

Deliciously seasoned air fryer cauliflower with a hint of lemon and spices.


Ingredients

Scale
  • 1 head cauliflower (about 1 1/2 to 2 lb), including greens, cut into bite-sized pieces
  • 1 medium red onion, thinly sliced into slivers
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ras el hanout
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, zested and juiced
  • Fresh chopped parsley or cilantro, for garnish (optional)

Instructions

  1. Preheat the air fryer to 400°F.
  2. In a large mixing bowl, combine the cauliflower and the red onion slivers. Drizzle with the olive oil, and sprinkle in ras el hanout, salt, and black pepper. Toss well until everything is evenly coated.
  3. Arrange the vegetables in a single layer in the air-fryer basket. If necessary, cook in batches. Cook, shaking the basket or flipping the florets about halfway through, until cauliflower florets are completely tender and the edges of the vegetables begin to singe to a pleasant golden-brown color, 15 to 20 minutes.
  4. Once done, transfer cauliflower to a serving bowl or platter. Immediately sprinkle with lemon zest and drizzle with lemon juice. Toss gently to combine. Top with chopped parsley or cilantro, if you like.

Notes

  • For extra flavor, you can marinate the cauliflower for a few minutes in the olive oil and spices before cooking.
