Ingredients

- 1 lb lean ground beef (or turkey)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 can (14 oz) diced tomatoes with green chilies
- 1 can (15 oz) kidney beans, rinsed
- 1 cup corn (fresh, frozen, or canned)
- 4 cups low-sodium chicken broth
Instructions
- In a large pot over medium heat, brown the ground beef until fully cooked.
- Remove excess fat, then add onion and garlic; sauté until softened.
- Stir in taco seasoning and cook for about 1 minute.
- Add tomatoes, kidney beans, corn, and chicken broth; bring to a boil.
- Reduce heat and simmer for 20 minutes to meld flavors.
- Taste and adjust seasonings as needed before serving with your favorite toppings.
