- 4 bone-in, skin-on chicken thighs
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp dried thyme
- Salt and black pepper, to taste
- 1 lemon, sliced
- 4 garlic cloves, crushed
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, toss baby potatoes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet.
- Rub chicken thighs with remaining olive oil, oregano, thyme, salt, and pepper. Arrange chicken on the baking sheet with potatoes.
- Scatter lemon slices and crushed garlic around the pan.
- Roast for 40–45 minutes, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy.
- Optional: Broil for 2–3 minutes at the end for extra crispiness.
- Garnish with fresh parsley before serving.

- For added flavor, let the chicken marinate with the spices for a few hours before cooking.
