Description

Deliciously roasted bone-in chicken thighs paired with crispy baby potatoes, seasoned perfectly for a delightful meal.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • Salt and black pepper, to taste
  • 1 lemon, sliced
  • 4 garlic cloves, crushed
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, toss baby potatoes with 1 tbsp olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet.
  3. Rub chicken thighs with remaining olive oil, oregano, thyme, salt, and pepper. Arrange chicken on the baking sheet with potatoes.
  4. Scatter lemon slices and crushed garlic around the pan.
  5. Roast for 40–45 minutes, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy.
  6. Optional: Broil for 2–3 minutes at the end for extra crispiness.
  7. Garnish with fresh parsley before serving.
