Description

Delicious and light mango crepes filled with whipped cream and fresh mango, perfect for breakfast or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 2 eggs (large)
  • 1 cup milk
  • 2 tbsp granulated sugar
  • 2 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 cup ripe mango (pureed or finely diced)
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Whisk flour, sugar, and salt in a bowl.
  2. Add eggs and mix until thick.
  3. Gradually whisk in milk, then butter and vanilla.
  4. Rest batter 20 minutes.
  5. Cook thin crepes in a non-stick pan until lightly golden.
  6. Whip cream with sugar and vanilla.
  7. Fold mango into whipped cream.
  8. Fill and fold crepes into pillows and serve.

Notes

  • For best results, let the batter rest for at least 20 minutes to achieve a smooth texture.
  • Feel free to substitute the mango with other fruits if desired.
