Grilled Chicken and Peach Skewers

Description

Deliciously grilled chicken skewers featuring tender chicken, sweet peaches, and spicy jalapenos, glazed with a fruity peach glaze.


Ingredients

Scale
  • 15 wooden skewers, (soaked in water for 30 minutes)
  • 2 pounds boneless, skinless chicken breasts, (cut into 1-inch cubes)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 4 yellow peaches, (quartered, then halved (32 pieces))
  • 3 medium jalapeno peppers, (halved, seeded, cut into chunks)
  • ½ cup (160 g) peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, (minced)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. To a large bowl, add chicken, salt, pepper, chili powder, and oil. Toss to coat.
  2. To each skewer, thread peach, chicken, jalapeno, chicken, jalapeno, chicken, and peach. (This is how I assembled each skewer; feel free to thread the skewers as desired.)
  3. Preheat the air fryer to 375°F (190°C).
  4. To prevent sticking, brush the skewers with olive oil. Place into the basket of your air fryer in a single layer. Depending on the size of your air fryer, you may need to work in batches.
  5. Air fry the skewers for 11-12 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. While the skewers are cooking, prepare the peach glaze. To a medium saucepan, add the glaze ingredients. Mix until incorporated and continue to cook until warmed through.
  7. Once the skewers are done, brush them generously with the glaze. Serve warm.

Notes

  • Make sure to soak the skewers to prevent burning while grilling.
