Description

Ingredients

  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon

  • 3/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 2 large eggs (room temperature)
  • 1/2 cup unsulfured molasses
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp milk or cream (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, then mix in molasses and vanilla until smooth.
  5. Gradually combine dry ingredients with wet ingredients; mix until just combined.
  6. Pour batter into the prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.
  7. While cooling, whisk powdered sugar with milk or cream for the glaze.
  8. Drizzle glaze over the cooled loaf before serving.
