- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 2 large eggs (room temperature)
- 1/2 cup unsulfured molasses
- 1 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tbsp milk or cream (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, then mix in molasses and vanilla until smooth.
- Gradually combine dry ingredients with wet ingredients; mix until just combined.
- Pour batter into the prepared pan and bake for 55-65 minutes or until a toothpick comes out clean.
- While cooling, whisk powdered sugar with milk or cream for the glaze.
- Drizzle glaze over the cooled loaf before serving.
