Ingredients

- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup molasses
- 1 egg yolk
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In another bowl, cream the butter and brown sugar until fluffy. Mix in molasses and egg yolk.
- Gradually combine dry ingredients with wet until a dough forms. Chill if sticky.
- Roll dough into tablespoon-sized balls and place on a lined baking sheet. Flatten slightly.
- Bake for 10–12 minutes until lightly golden. Cool before serving.
Notes
- For extra flavor, add a pinch of nutmeg.
- Store cookies in an airtight container for freshness.
