Bourbon Cherry Syrup

Description

A delicious bourbon cherry syrup that enhances any dessert or cocktail.


Ingredients

Scale
  • 1/2 cup water
  • 1 cup granulated sugar
  • 1 2-inch piece of orange peel
  • 1 2-inch piece of lemon peel
  • 1 cinnamon stick
  • 23 whole cloves
  • 1/2 lb (8 ounces) fresh or frozen dark sweet cherries
  • 1 tablespoon tart cherry concentrate
  • 1/2 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup bourbon

Instructions

  1. Add the water, sugar, orange peel, lemon peel, cinnamon stick and cloves to a medium-sized pot over medium heat. Bring to a boil, stirring until the sugar dissolves, and simmer for 1-2 minutes.
  2. Remove from heat and let sit to infuse for 10-15 minutes. Use tongs or a slotted spoon to remove the citrus peels, cinnamon stick and cloves.
  3. Return to medium-low heat and add the cherries, tart cherry concentrate and lemon juice. Cook for about 5 minutes, then remove from heat. (Don’t go over 5 minutes if using frozen cherries. If using fresh, you can go a bit longer until they start to soften.)
  4. Stir in the vanilla extract, almond extract and bourbon. Cool to room temperature, then transfer the cherries and syrup to a 16 oz jar. Keep stored in the refrigerator for up to a month. For maximum flavor, wait a few days to use them (to give the cherries time to soak up some of the bourbon).

Notes

  • For maximum flavor, allow the cherries to soak in the bourbon for a few days before using.
  • This syrup pairs well with ice cream, pancakes, or cocktails.
