Ingredients

- 1 pound extra lean ground turkey
- 1/2 cup diced tomatoes
- 1 tablespoon grated red onion
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh cilantro
- 1 lime (zest and juice)
- 1 tablespoon canola oil
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees F.
- Add all ingredients together in a mixing bowl; then form into a rectangle shape and place in an oven safe baking dish.
- Bake for approximately 1 hour or until the internal temperature reaches 175 degrees F.
- Remove from the oven and allow to rest for 5 minutes before slicing into 5 pieces.
Notes
- For added flavor, try mixing in some Worcestershire sauce or your favorite spices.
- Letting the meatloaf rest helps to keep it moist.
