- 8 ounces fettuccine or pasta of choice
- 1 pound boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot of boiling, salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
- While the pasta cooks, season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts.
- Brown each side for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing it into strips.
- In the same skillet, add a bit more olive oil if needed. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream, stirring to combine. Gradually add the Parmesan cheese, continuously stirring until the sauce is smooth and creamy. Season with additional salt and pepper to taste.
- Toss the cooked pasta and chicken slices into the skillet with the sauce, mixing well until evenly coated. Cook for another 2-3 minutes until everything is heated through.
