Ingredients

  • 8 ounces fettuccine or pasta of choice
  • 1 pound boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot of boiling, salted water, cook the pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts.
  4. Brown each side for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove from the skillet and let it rest for a few minutes before slicing it into strips.
  5. In the same skillet, add a bit more olive oil if needed. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the heavy cream, stirring to combine. Gradually add the Parmesan cheese, continuously stirring until the sauce is smooth and creamy. Season with additional salt and pepper to taste.
  7. Toss the cooked pasta and chicken slices into the skillet with the sauce, mixing well until evenly coated. Cook for another 2-3 minutes until everything is heated through.
