Delicious chocolate covered peanut butter balls, perfect for a sweet treat or dessert!

- ½ cup unsalted butter (1 stick, softened)
- ¾ cup creamy peanut butter (JIF-style)
- ½ teaspoon pure vanilla extract
- 2 ½ cups powdered sugar
- 10 ounces semi-sweet chocolate chips (or candy melts)
Instructions
- Line a large baking sheet with parchment paper. Set aside.
- In a stand mixer or a large bowl with a hand mixer, beat together softened butter, peanut butter, and vanilla until smooth and creamy.
- Gradually beat in powdered sugar until a thick dough forms.
- Using a 1-tablespoon scoop, scoop and drop peanut butter balls onto the prepared baking sheet. Roll into smooth balls. Insert a toothpick about ¾ of the way into each ball. Cover and chill in the freezer for 30 minutes, until firm.
- Melt chocolate in a microwave-safe cup, heating in 15-second increments. Stir in between, melting until smooth.
- Dip a ball mostly into the chocolate, leaving a small uncovered opening at the top. Drip off excess and place onto the sheet. Repeat for all balls.
- Remove the toothpicks. Using the tips of your fingers, press the hole together.
- Chill in the refrigerator until chocolate is hardened. Enjoy immediately or see storing instructions.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- Substitute other types of nut butter for a different flavor.
