Creamy Garlic Chicken in Crockpot

Description

A delicious creamy garlic chicken dish cooked in a crockpot.


Ingredients

Scale
  • 4 chicken breasts
  • To taste Salt & Pepper
  • 1 Tablespoon olive oil
  • 1 cup chicken broth
  • 4 cloves garlic (minced)
  • 4 ounces sun-dried tomatoes (chopped)
  • 2 Tablespoons cornstarch
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 cup fresh basil

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat oil in a large skillet over high heat. Once the pan is hot, add the chicken and brown for a couple minutes on each side.
  3. Place the chicken in the base of your crockpot.
  4. In a 2-cup liquid measuring cup, whisk together chicken broth, garlic, sun-dried tomatoes, cornstarch, Italian seasoning, red pepper flakes, salt & pepper. Pour over the chicken.
  5. Cover and cook on low for 3 hours, until the chicken is tender and cooked to 165º F.
  6. Mix together the heavy cream, Parmesan cheese and fresh basil.
  7. Once the chicken is cooked through, remove from the crockpot, and pour in the heavy cream mixture. Stir well to combine.
  8. Add the chicken back, spoon the sauce over the chicken, and cook for 15 minutes until the sauce is warmed through.
  9. Remove and serve, spooning extra sauce over each piece of chicken.
