Description
A delicious creamy garlic chicken dish cooked in a crockpot.
Ingredients

- 4 chicken breasts
- To taste Salt & Pepper
- 1 Tablespoon olive oil
- 1 cup chicken broth
- 4 cloves garlic (minced)
- 4 ounces sun-dried tomatoes (chopped)
- 2 Tablespoons cornstarch
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup Parmesan cheese (grated)
- 1/4 cup fresh basil
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat oil in a large skillet over high heat. Once the pan is hot, add the chicken and brown for a couple minutes on each side.
- Place the chicken in the base of your crockpot.
- In a 2-cup liquid measuring cup, whisk together chicken broth, garlic, sun-dried tomatoes, cornstarch, Italian seasoning, red pepper flakes, salt & pepper. Pour over the chicken.
- Cover and cook on low for 3 hours, until the chicken is tender and cooked to 165º F.
- Mix together the heavy cream, Parmesan cheese and fresh basil.
- Once the chicken is cooked through, remove from the crockpot, and pour in the heavy cream mixture. Stir well to combine.
- Add the chicken back, spoon the sauce over the chicken, and cook for 15 minutes until the sauce is warmed through.
- Remove and serve, spooning extra sauce over each piece of chicken.

- This dish can be served with pasta or rice for a complete meal.
