- 1 cup small pasta shapes (like ditalini or elbow macaroni)
- 1 cup freshly grated Parmesan cheese
Instructions
- Prepare the Chicken: Start by placing the chicken breasts at the bottom of your crockpot. You want to ensure they have enough space to cook evenly.
- Add the Base: Pour in the chicken broth and then add the diced tomatoes, ensuring everything is evenly distributed over the chicken.
- Season: Sprinkle the Italian seasoning, salt, and pepper over the mixture. Add minced garlic and diced onions next, stirring gently to combine.
- Cook: Cover the crockpot with its lid and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded.
- Shred the Chicken: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
- Add Pasta: Stir in your chosen pasta and let it cook in the soup for about 20-30 minutes, or until al dente. If the soup looks too thick, feel free to add more broth.
- Finish it Off: Just before serving, mix in the grated Parmesan cheese until melted and creamy. This will give the soup that iconic Chicken Parmesan flavor.
- Serve: Ladle the soup into bowls and sprinkle extra Parmesan on top, along with fresh basil or parsley for a burst of color and flavor.
