Instructions

  1. Prepare the Chicken: Start by placing the chicken breasts at the bottom of your crockpot. You want to ensure they have enough space to cook evenly.
  2. Add the Base: Pour in the chicken broth and then add the diced tomatoes, ensuring everything is evenly distributed over the chicken.
  3. Season: Sprinkle the Italian seasoning, salt, and pepper over the mixture. Add minced garlic and diced onions next, stirring gently to combine.
  4. Cook: Cover the crockpot with its lid and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded.
  5. Shred the Chicken: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
