- 4 pieces boneless, skinless chicken breasts
- 2 cups fresh broccoli florets, steamed and chopped
- 1 cup cheddar cheese, shredded (can be swapped for mozzarella or gouda)
- 1/2 cup cream cheese, softened
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- Optional fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper for easy cleanup.
- In a mixing bowl, combine the steamed broccoli, cheddar cheese, cream cheese, garlic powder, salt, and pepper. Mix until well blended.
- Carefully slice a pocket into each chicken breast, being careful not to cut all the way through.
- Generously fill each chicken breast pocket with the broccoli and cheese mixture.
- In a large skillet over medium heat, add olive oil. Sear each stuffed chicken breast for about 2-3 minutes per side, or until golden brown.
- Transfer the chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature).
- Let the chicken rest for a few minutes, then garnish with fresh parsley before serving.
Notes
- This recipe can be customized with different cheese options if desired.
- Make sure not to cut all the way through the chicken when slicing pockets.
- Resting allows the juices to redistribute for a more flavorful dish.
