Za’atar Spiced Chicken Thighs

Description

Enjoy flavorful and juicy chicken thighs seasoned with a delicious za’atar spice blend and cooked to perfection.


Ingredients

Scale
  • 2 tbsp extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 tbsp za’atar spice blend
  • 1 tbsp paprika
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 68 skin-on, bone-in chicken thighs (about 1 1/2 lbs | 680g)
  • Fresh parsley and lemon slices for serving, optional

Instructions

  1. Preheat oven to 350°F (180°C). Line a large baking dish with foil or baking paper then place an oven safe wire rack inside the pan. Spray with a bit of oil and set aside.
  2. In a large mixing bowl or dish, mix together the olive oil, garlic, za’atar, paprika, lemon juice, zest, salt and pepper.
  3. Add the chicken thighs to the bowl and toss in the mixture until all sides of the chicken piece are well coated in spice. Use your hands to get the spice mixture under the chicken skin if possible.
  4. Place chicken thighs skin side down on the wire rack. Leave a couple inches in between each thigh. Transfer to the oven on a middle rack and bake for 25 minutes.
  5. Remove the chicken from the oven temporarily to flip each piece over so now the chicken is skin-side up. Return to oven and bake another 25-30 minutes or until the thighs reach an internal temperature of at least 165°F (74°C).
  6. Optional: Turn the oven heat up all the way to broil a final 1-2 minutes to crisp up the skin.
  7. Remove chicken from oven. Garnish with fresh parsley and additional za’atar if desired and serve immediately.

Notes

  • For extra flavor, let the chicken marinate in the spice mixture for a few hours or overnight.
  • Serve with a side of rice or salad for a complete meal.
